Ingredients:

  • 2 Boneless chicken breasts
  • 1 teaspoon fresh ground black pepper
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt

Directions:

  1. Begin by placing chicken breasts on a hard surface, cover with wax paper, and pound to ½” thickness. This step ensures that the meat will be tender and provides for even grilling.
  2. In a plastic or ziplock bag, mix olive oil, pepper, lemon zest and salt. Add the chicken and be sure the meat is well coated. Let it marinate in the fridge for 2 hours and better if overnight. If you are in a hurry, marinate for 30 minutes.
  3. Preheat the George Foreman Grill on high if your model has this option. Place the drip tray in front of the grill. Remove the chicken from the fridge.
  4. When the grill is ready, take the chicken from the plastic or Ziploc bag and place chicken breasts on the grill. Close the lid.
